Belgian Yeast Waffles

These belgian yeast waffles are lighter and fluffier than regular waffles while being richer. Top with something sweet or with a fruit with some acid to balance them out and they're amazing.

Equipment

  • 1 waffle maker
  • 1 mixing bowl

Ingredients
  

  • 1.5 cups slightly warm milk microwave for about 45 seconds with a 1000w microwave
  • 6 tbsp melted unsalted butter
  • 4 tbsp maple syrup
  • 3/4 tsp salt
  • 1 tsp vanilla extract
  • 2 eggs
  • 2 cups all purpose flour
  • 1 package instant yeast (7 grams)

Instructions
 

  • Combine the milk, maple syrup, and yeast. Allow to bloom for 10 minutes. Yeast should start to bubble on surface.
  • Combine all the ingredients and mix just until incorporated in large bowl, leaving room for yeast to rise.
  • Cover and allow to rise for at least one hour in a warm place. If you have an oven with a proofing function it can be done there.
  • Preheat waffle iron.
  • Spray waffle iron with butter flavor nonstick spray. Spray between each waffle.
  • Pour on about a cup of waffle batter. Batter will rise when cooking so be careful to not overfill. Cook for 5 to 7 minutes.
  • Repeat until all batter cooked. Finished waffles can be stored in a warm oven for up to an hour after cooking.

Careful, the batter amount can vary greatly for waffle irons, and cook time can also vary.
